Chashni ke Chawal

(Rice Cooked in Sugar Syrup )

Traditionally made in our house on the day of Basant Panchami

On this day we even wear yellow besides making yellow chashni ke Chawal

1 cup cooked long grain Basmati Rice

1/3 cup sugar

2 tbsp water

10-12 almonds finely chopped

10-12 pistachios finely chopped

Hand ful pine nuts

1/2 tsp saffron

4-5 green cardamoms

3-4 cloves

1/2” stick cinnamon

1/4 tsp turmeric

1 tbsp ghee

Boil the rice in ample water with the turmeric.

When it is cooked break a few with your fingers if there is no grain inside it is cooked.

Drain in a wide colander and leave to air.

Mix the sugar and water and saffron in a bowl.

Heat the ghee add in the spices and let them swell up. Add the dissolved sugar and cook till you get a one thread consistency.

Add in the chopped nuts

Add in the rice and cook stirring it gently till the syrup dries up.

Serve with a spicy dal or mogar.
