Al yakhni / lauki yakhni is a very light and aromatic dish. A must try for the lauki lovers……traditionally it is served with white boiled rice……


Lauki 500 gm cut in 2 inch batons

Curd 1 ½ cup

Shahjeera ½ tsp

Cloves 4

Black cardamom 2

Cinnamon 1 inch

Fennel powder 1 tbsp

Ginger powder ½ tbsp

Asafetida a pinch

Mustard oil 4 tbsp

Salt as per taste


In a bowl add curd, fennel powder and ginger powder whisk well.

Bring mustard oil to a smoking point then remove from fire.

Cool a little and add the lauki batons fry light golden.

With a slotted spoon remove the batons and in the same oil splutter the shahi zeera, cardamom, cloves and cinnamon.

Remove from the heat and add the whisked curd.

Put back on gas and bring to a boil stirring continuously.

Reduce heat to medium and add a cup of boiling water and salt, mix well.

Add the fried lauki pieces simmer for 5 minutes.

Serve with steamed white rice.
