Roasted chunky Capsicum and Tomato Salsa

A delicious addition to the starters. Can be had with Nachos , Tacos , Chips , Potato Wedges or even Papad.

2 capsicums blistered on an open flame

2-3 large tomatoes blistered

1 large onion chopped

1 /2 tablespoon oil

5-6 garlic cloves

2 -3 green chillies finely chopped and deserved

A few Basil leaves

Salt to taste

2 tbsp vinegar

3/4 tsp chilli flakes

1 tsp sugar

A few Olives.

Peel the blistered tomatoes and capsicums and roughly chop

Heat the oil in a wok. Add in the onions and garlic and cook for Just 2 mins. Add in the Capsicum, tomatoes, green chillies, basil leaves, vinegar Chilli flakes salt and sugar. Mix well. Cook for another minute. Cover with a lid . Remove after a few mins . Top with a few Olives. Chill
