Leftover Upma Cutlets
I had a whole bowl ful of leftover Upma
Sometime back. Nobody wanted to have it again so we just asked our cook to make Cutlets with it. A lovely snack . And come to think of it who doesn’t love Cutlets. However much we might be on a diet but One toh we can sneak in .
1 bowl vegetable Upma leftover
( about 2 cups packed)
1/2 cup mashed potatoes
1/3 cup crushed corn kernels
1 onion finely chopped
2 green chillies finely chopped
1/2 tsp cracked pepper
A dash of lemon
A little salt
Mix all the ingredients together and shape into the desired size
Make a thin slurry with 2 tbsps Maida and 3/4 cup water. Mix it well .
On a plate spread some fine bread crumbs or semolina.
Roll each cutlet in the Sooji/ bread crumbs.
Dip in the slurry. Roll again in the crumbs. Deep fry or bake.
Have with a chutney or dip if your choice.
