Kantola/ Spiny Gourd / Teasle Gourd
A lovely vegetable with amazing help benefits. Aids digestion , full of antioxidants, very good for diabetes.
Looks like Karela but not bitter at all
300 gms Kantola ( washed and sliced into thin roundles )
1/2 cup onions thinly sliced
1/2 tsp saunf
Pinch of hing
1 tsp red chilli powder
1 1/2 tsp coriander powder
1/2 tsp haldi
Salt to taste
1 1/2 tbsp mustard oil
Here I’ve used an iron Kadhai ( wok)
Heat the oil in the Kadhai. Add in the saunf and hing. Let it crackle. Put in the onions and sauté till slightly cooked. Now add in the sliced Kantola. Add the salt and haldi. Cook on an open flame for 5-7 minutes. Mix it well.
Cover and cook for 15-20 minutes. On a low flame. Keep tossing after every few minutes so that it doesn’t scorch or stick to the Kadhai . After it’s tender. Add in the dhaniya and red chilli powder. Cook for a few more mins. Serve.
