Ghia/ Bottle Gourd Soup

2 cups ghia chopped

1/2 cup onions sliced

2 tsps oil

Salt

1/4 tsp cumin

Cracked Pepper

Lemon juice

Roasted Garlic

Dried Parsley

An absolutely no fuss recipe. A delight to the palate.

Heat the oil in a vessel.

Tip in the oil/ butter. Add the cumin. Add the onions and sauté till transparent. Now add the Ghia sauté for a min. Pour in 4 cups of some reserved broth or water.

Add the salt and pepper. Since I used a cooker I gave it to whistles.

Let the cooker cool. Open the lid. Cool. Blend in a blender till smooth.

Add in more water or broth if it’s too thick.

Give it a boil. Just before serving mix in a dash of lemon juice. Sprinkle some parsley. Top the soup with a few bits of roasted garlic.

Can even add some grated cheese.
