I’m definetly on a Watermelon trip. So another watermelon rind recipe. 
Easy and most certainly tasty . The taste of the spices is not very strong so one can just go on munching. 
Pickled Watermelon Rind. 
1 cup watermelon rind cut into sticks

2 cups water

1 bay leaf

1 tbsp ginger juice 

1 tsp pepper corn

1 heaped tbsp salt 

1 tsp sugar 

3 tbsp Apple cider vinegar 
Boil the water with the bay leaf and peppercorns. Cool. Put in the salt sugar and vinegar. Stir till it dissolves. Pour this brine into a glass jar. 

Grate the ginger and put the grated ginger in a cheese cloth or fine seive. 

Squeeze out the juice. 

Add this juice to the brine. Mix. Or just add slices of ginger. 

Add the Watermelon Rind Sticks. Mix. 

Close the jar and leave it out for a night 

and refrigerate. 

Munch on it. Eat it like a snack or as a condiment. It’s delicious and so pretty too.
