Watermelon Rind Salad. 
2 cups water melon Rind 

1 tbsp flax seeds toasted 

1 tbsp lemon juice 

Cracked black pepper

1 garlic clove crushed. 

3/4 tsp sugar

2 tbsp chopped coriander 

Salt 
Chop the watermelon rind into fine pieces 

Place in a large bowl

Add in the sugar , salt , black pepper and lemon juice , and crushed garlic clove. Sprinkle the flax seeds and garnish with the chopped coriander. 

Chill
