Roasted Green Capsicum Soup
2 green Capsicums
1 medium Onion
2 cloves garlic
1/2 cup ghia ( bottle gourd)( I used it to give the soup some body.
2 tbsp finely chopped parsley/ Dill /Coriander
1/2 tsp cracked pepper
Boil the ghia and garlic with 3 cups of water in a cooker . Give it 2 whistles.
Meanwhile bake the Capsicums, Onions and tomato till blistered.
Peel the veggies.
Roughly chop and put in a blender
Cool the ghia and put it in the blender with the water.
Blend till fine. Pour it out into a vessel .
Add the salt , parsley and cracked pepper
Give it one boil.
