Khoi/ Kheel Upma
Kheel is another variant of puffed Rice. Soft but rough in texture. It is mainly used for Pooja during Diwali and Sankranti
There are a number of snacks that can be made with Kheel. Cutlets , mmurmure etc
We can even make soft jaggery laddoos Of Kheel .
The Upma is light and delicious.
Make it with or without the veggies it doesn’t matter.
3 cups Kheel
1/2 cup mixed boiled veggies ( carrots beans , potatoes)
1 onion finely chopped
2-3 green chillies minced
A few curry leaves
1-2 tbsp oil
A dash of lemon juice
1/2 tsp mustard seeds
1/3 tsp turmeric
Pick out the husks from the Kheel
Soak the Kheel in a big bowl of water for about 5-6 minutes. It will start getting soggy. Immediately drain it.
Heat a the oil in a Kadhai.
Add in the mustard seeds and curry leaves and green chillies . Cook for a minute.
Add the onions and cook till translucent
Add in the mixed boiled veggies
Now mix in the salt , haldi and green chillies. Add in the drained Kheel. Toss and mix. Add the lemon juice. And garnish with fresh coriander.
