Sama Kheer ( Barnyard Millet pudding) 
A lovely kheer low on milk and sugar 

Quick easy and gets made in a jiffy . 

Tastes like phirni. 
1/2 cup Sama washed , soaked in water

1/4 cup sugar

1 1/2 cups water

3/4 cup milk

2-3 cardamoms crushed

A few strands of saffron

Dry fruit( Almond n pistachio) optional 

2 tsps ghee 
Soak the Sama for an hour 

Heat the water in a pan 

Drain the Sama and add it to the boiling water 

Start stirring immediately so that it doesn’t form lumps 

Lower the flame and let it cook for 8-10 minutes 

Add the milk and cook again. Stirring from time to time . Let it thicken . 

Now add the sugar. Stir till the sugar is dissolved

As it starts thickening add in the crushed cardamom seeds and saffron .

Add the nuts ( I didn’t use)

Just before serving mix in the ghee. ( optional). But it is amazing with a dash of ghee. 

It can be had hot or cold on its own or with fresh curd.
