Aloo Shimla Mirch 
* 2 cups boiled and cubed potatoes

* 2 capsicums cut into chunks deseeded 

* Handful cherry tomatoes (optional)

* 2 tbsp Thencha

* 1 1/2 tbsp MO

* 1/2 tsp turmeric 

* 1 tsp cumin

* 1/4 tsp hing

* 1 tsp red chilli powder 

* 1/4 tsp fennel seeds

* 1 tsp coriander powder heaped

* Dash of lemon 
Thencha

•8-10 cloves garlic peeled

•5-6 green chillies

•Salt to taste

•1 tsp oil

•1 tbsp peanuts( optional)

Heat the oil sauté the peanuts, garlic n green chillies for 2-3 mins 

Cool n mix salt . 

Pound roughly in a mortar n pestle 
Heat the oil in a Kadhai. Add the cumin, saunf and hing. Let them crackle. Add in the Capsicum chunks and stir fry till they start blistering. Add the spices and mix. Add in the potatoes and salt . Mix cover and cook for a few minutes. Add the cherry tomatoes. And cook again on high for a few mins. Add the dash of lemon. Close the flame and cover the veggie with a lid. Let it rest for a few minutes. Just before serving sprinkle some thencha over it. The tiny bits of peanuts , garlic and chillies take this mundane but delicious veggie to another level altogether
