Hot and Sour Vegetables. 
3/4 Broccoli florets

Mushrooms chopped into 4 pieces 

Zuchchini slit and cut into slices

1/2 + 1/2 Red yellow bell pepper roasted

6-7 Cherry Tomatoes 

1 tbsp heaped finely chopped celery 

1 red chilli fresh sliced

2 tbsp Tomato purée

2 tbsp Ranveer Brars hot and sour sauce

2 tsps chilli garlic paste 

2 tsp oil 

Salt to taste 

Hot and sour sauce 

2 tbsp oil

2 tbsp garlic finely chopped

1/2 cup tomatoes chopped

2 tbsp tomato ketchup 

2 tbsp vinegar

1 tbsp red chilli powder

1 tbsp light soy sauce

1/2 tbsp sugar

1 tbsp five spice powder

Salt 

Water as required 

2 tbsp cornstarch 
For the Sauce 

Heat the oil in a deep pan.

Add the garlic and sauté for a minute. 

Then add the chopped tomatoes and fry for another minute.

Add the red chili powder and fry for 20 seconds then add the ketchup, vinegar and soy sauce and simmer for a minute. 

When the oil seperatesand rises to the top, add the sugar, salt and 1/3rd cup water and stir well to combine. Turn up the heat and let it come to a boil. 

Place the cornstarch in a small bowl and whisk in 2tbsp water till well combined. 

Pour this into the sauce and stir to mix well. 

Cook for 5-10 minutes till it thickens. 

Check the seasoning and adjust as required. Store in a jar in the fridge. 
Chilligarlic paste
1/4 cup garlic peeled

7-8 dried red chillies

Salt

2 tbsp oil

Deseed the chillies. And soak in a bowl of warm water.whenthe chillies are soft. Grid them with the garlic and salt with a little water . Heat the oil and cook the paste in it for a minute. Store in a jar in the fridge 
Blanch the broccoli florets and drain. Peel the onion chop into four and seperate the layers. 

Heat the oil. Add in first the chilli garlic paste then the purée, then the hot and sour sauce. Drop in the Zuchchini and mushrooms and mix them well. Sori Kyle. Little water and cook for a few minutes on low.  

Add in the rest of the veggies and salt. Mix them well add a little more water if you need a gravy or just leave it as it is. Add the cherry tomatoes at the end. Don’t cook it for long. Just be quick. Or the veggies will lose their shape. 

Serve with rice.
