Baked Achari Methi Suhaali / Mathri 
250 gms maida 

250 gms atta

3 tbsp ghee

3/4 tsp salt 

1/4 cup kasoori Methi

3 tbsp Masala from the mango pickle 

1/2 tsp carrom seeds

Water as required to knead a stiff dough 
Mix the Maida and atta. Mix in all the dry ingredients. Make a well in the centre. Tip in the warm melted ghee and Achaar Masala. Mix this in the flour. Sprinkle water little by little and knead to a stiff dough. 

Cover with a wet kitchen towel and let it rest for about 30 minutes. 
Break the dough into small lumps and rol out into small discs . Or break the dough into 2 portions. Roll out one portion to a large disc. Cut with a round cookie cutter. 

Pierce these discs with a fork on both sides. Place the discs on a baking sheet. 

Bake in a hot oven at 120 • for 15-20 mins. 

Flip and bake for 10 more mins or until they have a nice light brown colour. 

Cool . Store in airtight boxes. 

There great as a snack on the go or with tea or coffee.
