Achari Stuffed Chillies
6-7 large green chillies. 

1 cup mashed boiled potatoes 

2 tbsp masala taken from the mango pickle

2 tsps mustard oil 

1 pinch of hing

1/2 tsp coriander seeds

1 tsp panch phoran 

1 tsp redchilli powder

2 tbsps grated coconut 

Salt to taste 

1 tbsp lemon juice 
Remove the stems of the chillies. Slit them on one side from the top to bottom. Remove the seeds 
Heat the oil in a vessel. Add the hing and panch phoron. 

As it crackles add the the rest of the spices coconut and potatoes . 

Add the pickle masala and mix it. Add the lemon juice. Cool. 

Fill this Aloo masala in the chillies. 
Heat 2 tbsps mustard oil in a wok. Add in the chillies. 

Flip them gently so they all get coated with oil.

Keep on a very low flame and cover with a lid 

Keep checking and flipping from time to time till the skin of the chillies get a blistered look. Remove in a bowl. 

Makes a great side dish or an additional veggie.
