Stuffed Capsicum Rings
I’ve stuffed Aloo Ka masala here but , Paneer , rice , veggies, soya all work well here. 
3-4 capsicums

Boiled potatoes 

1 onion finely chopped

1 tsp ginger green chilli paste 

1/2 tsp saunf

1 /2 tsp red chilli powder 

1/4 tsp hing

Salt 

2 tsp chopped coriander 

1/4 tsp turmeric

1/2 tsp Garam masala

1 tbsp lemon juice

2 tsps oil plus 1 tbsp more
Mash the boiled potatoes about a cup

Heat 2 tsps oil in a Kadhai 

Add the hing and saunf and cook it for a few seconds. Add the onions and ginger green chilli paste. and cook the onions till pink. Add in the potatoes, turmeric , red chilli powder , Garam Masala and salt . Mix it well. Mix in the lemon juice and chopped coriander. 

Slice off the top of the capsicums and remove the seeds in the centre

Cool and fill the potato masala in the capsicums 

Now cut the capsicums into 1/2″ thick slices. 

Roast these Capsicum rings in a frying pan 

Sprinkling a few drops of oil . Flip and roast again.
