Yes made them today. Super delicious. Been wanting to make Polenta cakes since a very long time. And finally it’s done. This is an amalgamation of 3-4 recipes from the internet. So I can’t give credit to one.
1/2 cup Milk
1 1/2 cups water
1 cup Polenta flour
1 tsp salt
1/4 cup cheddar cheese 1/4 cup cottage cheese
1 tbsp butter
1/2 tsp black pepper crushed
2 tbsp chopped jalapeños
1/4 cup chopped coriander leaves
Mix the milk ,water and salt and bring it to a boil. Add in the polenta flour an stir constantly with a whisk so as no lumps are formed.
Add in cheese, butter, pepper, jalapeños, coriander leaves andmix it well.
Grease a cake tin of about 6″/6″
Pour this mixture into the greased cake tin
Cover with a cling wrap. Keep for 2-3 hours in the fridge to completely set and become firm.
Cut into squares or desired shapes.
Grill on a pan brushing with olive oil.
Serve with caramelised onions and cheese sauce or honey.
2 onions thinly sliced
2 tbsp olive oil
1/2 tsp sugar
2 tsp balsamic vinegar
Fry the onions in oil till they becomes nice and golden add the sugar and balsamic mic. Cook till semi dry
100 gms cream cheese
1/4 tsp sugar
1 clove garlic minced
2 tbsp milk
1 tsp butter
Tip the butter in a small pan add the minced garlic. Fry for a few seconds. Tip in the cream cheese. Let it melt. Add the milk
Cook for about 2-3 mins. Add the salt and remove from the flame.
