Karachi Halwa My grandsons order ” Dadi Get me Red Halwa from Bombay”. And I was lost kya karoon?? Someone suggested take Karachi Halwa. So YouTube came to the rescue and here it is. From Khana Manpasand.
Though it didn’t become red but a lovely ” “HOT PINK ”
100 gms corn flour
200 gms sugar
400 ml water
70 gms ghee
1/4 tsp citric acid / 1 tsp lemon juice
A few drops of colour ( your choice )
2 tbsp cashew nuts roasted and broken into pieces
1 tbsp chopped pistachios
1/3 tsp cardamom powder
Dissolve the citric acid in 1/2 tbsp water and reserve.
Take a large Kadhai
Tip in the sugar
Add 200 ml of the water and let all the sugar dissolve.
Meanwhile mix the corn flour in the rest of the water. There should be no lumps.
Pour the cornflour slurry into the sugar syrup and keep stirring so it doesn’t get lumpy. Keep the flame on a medium heat and stir .
It will all come to get her. Now add the dissolved citric acid or lemon juice so that the sugar doesn’t crystallise
It will become like a transparent gel.
Add the ghee table spoon by tbsp it all the ghee is absorbed. Stirring all the while
Add the cardamom and cashews. Add a few drops of the food colour. Mix it well.
Drop the mixture in a cake mould to set.
Smoothen it out from the top . Garnish with finely chopped pistachios.
Let it cool down completely.
Overturn it on a plate and cut into pieces.
