Upkaari A delicious Konkani veggie made with cabbage and chana dal.
We had it on our way to Ahmednagar at a dhaba
So I googled and found this recipe on veg recipes of India
I cabbage chopped
½ cup chana dal washed
½ cup fresh grated coconut
1 medium size onion, chopped
5 -6 cloves garlic minced
1 tsp ginger chopped
1 to 2 sprigs of curry leaves
1 green chili, chopped
1 tsp cumin seeds
1/4 tsp turmeric powder
3/4tsp red chili powder
a pinch of asafoetida
¼ cup chopped coriander leaves
salt to taste
soak the chana dal in water for 1 hour.
heat oil in a Kadhai add the cumin and n curry patta
add the onions and saute till transparent
now add the garlic n green chillies
add the cabbage, chana dal.
Add in all the turmeric n red chilli pwd
mix everything and cover and cook the cabbage.
after 7-8 minutes, when the cabbage is half cooked, add the grated coconut and salt. Give it a good mix.
cover and cook for some more time about 10 -15 minutes till the chana dal is cooked not mushy but breaks to the touch
Mix in the coriander leaves and serve with rice or rotis
It wasn’t in the recipe but I added a squeeze of lemon too to give it a nice fresh taste
