Mushroom n Garlic Pinwheels

200gms / 1 pkt mushroom finely chopped
3-4 cloves garlic minced
1/3 tsp chilli flakes
1/4 tsp pepper pwd
Salt to taste
1 tsp mixed herbs
1 tbsp cream
2 tbsp grated cheese( I used smoked cheddar)
Salt a bit
Butter/ olive oil 1 tsp
Melt the butter in a pan tip in the garlic and herbs . After a few seconds add the mushrooms and a bit of salt n cook on high. The mushrooms will release water. Add the chilli flakes n pepper pwd and cook on high till the water almost dries up
Add in the cheese and cream n cook till we get creamy looking mushroom. Take off the flame n cool.
For the bread dough( recipe Rachna Agarwal)

2 cups maida( all purpose flour)
2 tsps active dry yeast( Angel)
1 1/2 tbsp sugar
3/4 tsp level salt ( or less)
200 ml milk Luke warm or room temp.
Salt 1/2 tsp
1 1/4 tbsp oil/ butter

1. Sieve the flour on a marble slab
2. Prepare a solution of yeast , sugar, salt, and water
3. Make a bay in the flour and pour in 80 percent of the solution
4. Combine the solution and the flour at a quick speed
5. Add more solution if required , the dough should be slightly sticky at this point
6. Knead using stretch and fold method , and pick and drop method
7. Add oil and knead again, using stretch and fold method, and palm kneading
8. Collect the dough , with the rounding method
9. Place in a greased bowl, cover with cling film and place the bowl in a warm place
10. As the dough ferments and doubles in size
11. Remove and punch the dough
12. Ferment again till the dough doubles in volume. Make a ball with e dough

Now dust the counter with some dry flour
Roll it out with a dusting of flour to a rectangular shape.
Smear the rolled out dough with butter
Spread the mushroom mix all over the rolled out dough with the spatula
Take one end of the dough n turn it inward
Start making a tight roll of the dough.
Cut into pinwheels with the help of a sharp bread knife.
Lightly grease an oven tray
Place the pinwheels on the tray taking care to keep a distance of atleast 1/2″ between
Each pinwheel.
Cover the tray with a damp cloth and let it rest in a warm place for atleast 20 mins
The pinwheels will swell n spread
Bake in a preheated oven at 200• till it turns a pale golden ( about 10-12 mins)
Brush the pinwheels with butter and remove each pinwheel carefully with a spatula
