Skillet Dhokla

Lovely dhokla crisp on the outside n soft inside. Almost like a savoury cake

1 cup ready dosa batter
8-10 methi dana
1 tsp heaped ginger n green chillies paste
2 tsps oil
1/4 cup thick curd
-/4 tsp hing
1 tsp eno (regular)
Reserve the eno n mix the rest of the ingredients in the batter. Whisk it a bit
Heat a nonstick pan / skillet and smear it with a little oil.
Gently Mix in the eno . The batter will become foamy n fluffy.
Pour the batter into the hot pan
Sprinkle some red chilli pwd on top and cover with a lid.
Cook on a medium flame for 5-6 mins n then lower the flame and cook for another
7-8 mins.
Check by inserting a knife in the centre. If it comes out clean it’s done.
Now with the help of a broad spatula gently release the sides and under side of the dhokla from the pan . Slide the spatula
beneath the dhokla and flip. Cook for 3-4 mins n flip once more.
Tempering
1 tbsp oil
3/4 tsp sesame seeds
1/2 tsp rai
A few curry leaves
Heat the oil in a tadka pan add the rai , sesame and curry leaves. As the rai splutters pour this tempering on the dhokla . Cut into pieces n enjoy with a nice green chutney
