Seviyan Paratha

Saw this recipe on you tube n so I tried it
I almost backed out because of the ghee content but then I finally made it.

Sift some whole wheat flour . Sprinkle water and knead to a Soft dough . Cover and keep aside for an hour.
Knead the dough once more to make it pliable.

Take a ball of dough the size of a golf ball and roll out . Dust with dry flour and Make a thin Roti. Lift the roti from the rolling board n keep it back on the board. But now don’t use the belan. I got a 9″ Roti
Smear the Roti liberally with ghee. I had use use a little over 1 tbsp ghee.
Now cut the Roti finely from end to end with the help of a Pizza cutter. The Roti will start resembling noodles.
Now gently with the help of a broad knife or spatula lightly lift n bring it to the centre
Repeat from the other end.
Make a coil on the gathered up Roti on the rolling board. Will resemble a pinwheel
Tuck the ends beneath the pinwheel
Liberally dust with flour n roll it to about 5″
With a very light hand .
Roast on a med in flame on a skillet till brown spots appear. There’s no need to apply more ghee as there’s a lot of ghee already in it. Flip and roast on the other side. After it is done. Place it on a kitchen towel or tissue and gently crush it.
It ready
