Poha exotica / Pohalette’

Poha( beaten rice ) 3/4 cup
1 choppedOnions
5-6 chopped Olives
5-6 Mushrooms chopped
1/4 cup boiled sweet Corn
1/3 cup Sprouts
1 tsp Parsley
2 tbsps Red Bell pepper chopped
2 tbsp Yellow bell pepper chopped
1 tsp chilli flakes ( can add more)
2 green chillies chopped
3-4 cloves garlic minced ( optional)
Coriander for garnish
2-3 tbsp grated coconut
1/2 lemon juice
1 tbsp olive oil

Wash the poha as usual. Under running water.
Heat the oil.add the garlic , onions n sauté till pink. Add the sprouts , n mushrooms cover n sauté for 2-3 mins. Add the boiled sweet corn red n yellow bell pepper sauté for a min. Add the chilli flakes , green chillies poha n salt. Toss n mix
Finally add the coriander n olives and the lemon juice. Sprinkle a little fresh coconut Mix it all n enjoy .garnish with some more coriander
