Peas n Paneer Rice with Coconut Gravy
Basmati rice 1 1/2 cups
1 cup boiled peas
150 gms paneer cut into small cubes
1 tsp jeera
2 green chilli chopped( optional)
2 tbsp ghee
Salt

For the gravy
1 onion thinly sliced
1 cup coconut milk
1/2 tsp sugar
2 tbsp ghee
Salt

For the paste
1 onion chopped
2 tsp khus khus
1 tsp cumin
2 tsps coriander seeds
6 whole red chillies
3 tbsp grated fresh coconut
4 cardamoms
1″ pc ginger

Boil the rice so that each grain of rice is separate. Keep aside
Heat the ghee in a vessel, add the jeera n chillies( I didn’t use any) fry for a min. Add the peas fry add the paneer Rice n salt n reserve

Paste:
Grind all the ingredients for the paste add a little water if needed

Gravy:
Heat the ghee in a wok and fry the sliced onion still translucent. Add the paste n fry for 5-7 mins on med heat add the coconut milk
Salt n sugar cook for 2-3 mins more

Grease a flat dish make a layer of the rice
Top with half the gravy n make a second
layer a layer of rice n a layer of gravy again
Lastly again a layer of rice. Cover with a foil n bake in a hot oven at 200• fo 20 mins . Carefully overturn in a platter n serve with s raita n roasted papads
