Baked Potato Stacks

400 GMs potatoes ( about 2-3 large potatoes
1 tbsp butter
1 tbsp cheddaror any melting cheese
1/2 tsp dried thyme/ fresh
2 cloves garlic chopped
Salt to taste
Pepper pwd

Wash the potatoes throughly n peel
Slice very thin preferably with a mandolin slicer . Place the sliced potatoes in a large bowl. Melt the butter an add in the garlic
Thyme.1/4 tsp pepper pwd n a bit of salt
Pour this over the potatoes n mix it well Add the cheese and mix again.
Grease the muffin trays with butter
Pick up a few slices of the seasoned potatoes an keep stacks of them in the muffin tray cavities. Sprinkle on a little more pepper and thyme.
Cover loosely with a foil n bake in a preheated oven at 180• for about 45-50 mins. Remove the foul n bake again for another 10 mins. Remove by scraping the underside with a butter knife n remove the stacks
Makes a great side dish with rice or pasta
