Savoury Besan Pie

2 med potatoes boiled with a bite
1 onion med peeled n jullined
2 tomatoes jullined
3/4 tsp sugar
2-3 cloves garlic minced
1 tsp ginger minced
1 tsp green chilies minced
3/4 tsp red chilli pwd
1/4 cup curry leaves
1/2 tsp rai
1 tbsp oil
1/2 tsp heeng

Heat the oil in a wok add the heeng n splutter the rai. Add 1/2 the curry leaves, ginger n green chillies . Add the onions n fry till translucent. Add the tomatoes , salt , sugar n red chilli pwd n grated potatoes . It should be dryish.
Place the flan ring on a plate n layer the gravy inside it.

Khandvi
1/2 cup besan
1/2 cup curd
1 cup water
1/2 tsp heeng
1 tbsp oil
1 tsp green chillies finely cut
1 tsp ginger finely cut
Salt to taste
1/4 cup coriander chopped
Reserve the chillies ginger n coriander n blend the rest of the ingredients in a blender . There should be no lumps. Pour the batter in a wide micro safe bowl n microwave on high for 2 mins.
Remove n whisk very well.
Repeat this process 2 more times
Whisk very well till smooth
Add the green chillies, ginger n coriander
Micro for 1 min. More n whisk for a few mins. Pour on the onion n tomatoes not leave it to set in the refrigerator for an hour
Make a tempering
Oil 2 tsps
Rai 1 tsp
Curry patta
Garnish with fresh grated coconut ( didn’t have any)
Cut into PCs n serve
