Club Kachori Aaloo Subzi
Holiday for everyone so decided to treat them with this dish and a Kachri ki chutney to go with it

Club kachori. A dish from Kolkata
Tiny kachoris crisp n delicious with a filling of urad dal . The maximum size being about 2″.

150 GMs urad dal soaked overnight
1/4 tsp Kalonji
1/4 tsp salt
1/2 tsp heeng
1/4 tsp saunf pwd
1-2 green chillies

Drain the dal thoroughly. Grind the dal with the green chillies preferably on a sil Batta / dry grinding jar without adding any water. It needn’t be very smooth Heat 2 tsp oil in a kadai . Drop in the Heeng, n Kalonji. Add the dal salt n saunf pwd mix for a minute or two. Take off the flame n remove the dal in a plate to let it cool down.

Dough for the kachori
1 cup/ 200 gms maida
1/4 cup fine sooji
1/2 tsp salt
1 tsp oil
Mix this with water n knead to a soft dough. Cover n leave it to rest for about 30 mins. Or more
Knead it a bit once more before use
Break into tiny bits. The size of a 25 paisa
Break the dal into small PCs too. A little smaller than the maida bits
Spread the maida balls. Stuff with the dal ball. Close firmly from all ends. Roll into a ball n press bet ween the palms. Lightly oil n keep aside in an oiled plate . Do the same with the rest of the maida n dal
Lightly roll out with the rolling pin with just 1 or 2 roll. Don’t make them bigger than 2″
Deep fry in hot oil 2-3 at a time. Slide it in the oil n press it down a bit with a slotted spoon. Immediately flip it n with the slotted spoon keep sloshing them with oil
As they start turning golden remove
Serve with Aaloo ki Subzi

Aloo ki Subzi
3-4 potatoes
1/2 tsp heeng
1 tsp Cumin

Soak
2 tsp coriander pwd
1 tsp Kashmiri Lal mirch
1/2 tsp turmeric
1 tbsp coriander seeds
1/2 tsp Kalonji
1 tsp Amchoor
1/4 tsp methi dana
1/2 tsp saunf ( fennel)

3/4 tsp sugar or less ( to be added at the end)
2 tomatoes grated
1 1/2 tbsp oil

Wash 3-4 potatoes. Cut them into cubes
Soak the masalas in a bowl full of water
Heat the oil in a Kadhai. Put in the heeng an cumin. As the cumin is browning add in the soaked masalas n bhuno the masalas till the oil starts showing. Add in the grated tomatoes n cook for 2-3 mins. Now drop in all the potatoes n stir fry in a high flame for some time. Lower the flame add the salt n let it cook on sim for 3-4 mins. Open the lid add about 3 cups of water cover n let it cook till the potatoes are soft. Open the lid add the sugar . Mash a few potatoes with the back of the ladle. The gravy should be thickish.
N joy with hot kachoris
Kachoris can be made well in advance.
Half fry them. Slide the kachoris in oil
Flip, drain n remove them on clean kitchen tissues. Just before serving refry in hot oil
