Gluten free Sandwhich

1 eggplant sliced about 1cm thick
Oil( olive oil or mustard oil)
Salt

1 cup hung curd
1 cucumber deseeded n chopped fine
1 large tomato deseeded n chopped fine
1 green chilli chopped
1 tsp garlic bread seasoning
1/4 tsp mustard pwd/sauce
Cracked whole pepper
3/4 tsp sugar
Salt a little

Garlic Bread Seasoning

1/2 cup powdered Parmesan Cheese
1 1/2 tsp salt level
2 tsp garlic pwd
2 tsp oregano dried
2 tsp basil dried
2 tsp parsley dried

Crush the dried basil , oregano and parsley, between the palms
Mix all the ingredients together n store in an airtight jar
Use on pastas, pizzas, toast or with French fries.

Sprinkle a little salt on the eggplant slices
Leave them to sweat. Drain the residue .
Heat a pan n sprinkle a little oil on it. Place the eggplant slices on the pan. Cook lightly flipping it 2-3 times n pressing down very lightly with a spatula till a nice golden in colour

Hung curd Salad
Lightly beat the hung curd in a bowl . Add rest of the ingredients n taste to adjust the flavour n seasoning.

On a platter place a slice of the cooked eggplant. Sprinkle a wee bit of salt. Spread a thick layer of the hung curd salad . Place another slice of the eggplant on top n repeat the process . Enjoy a light n healthy gluten free Sandwhich
