Baked Kachori

There’s this kachori you get in Mumbai
At Kalbadevi n it called Khara Kua ki Kachori. It is a tiny shop which is right at the corner of Khau Gali. This kachori has been gracing the jars of my Mums kitchen since I wasn’t even born. It was loved by one and all in the family barring me because it is very very hot. But now it seems they have tempered down the chillies n I was able to eat it. Believe me it was one of the best Kachoris that I’ve had in my life . Absolutely khasta . So I’ve tried to recreate it but I baked it.

For the outer skin
250 gms maida ( All purpose flour)
1/2 tsp salt
Oil 1/4 cup+1tbsp
Water to knead the dough
Seive the flour. Mix in the salt and oil till it looks crumbly. Add water n knead to a soft dough. Cover with a wet cloth n let it rest for about 30 mins.

Stuffing
100 GMs besan
1 tsp saunf
Pinch of hing
1/2 tsp black salt
A little white salt
1 tsp coriander seeds heaped
1/2 tsp Garam masala pwd
1/2 tsp haldi
1/3tsp black pepper pwd
1/2 tsp red chilli pwd( or as desired)
2 tbsp oil
2 cloves
1 tsp amchoor pwd
Water for sprinkling
Mix all the masalas in the besan reserving the hing
Heat the oil add the hing n clove. As the clove swells up add the besan mix n stir for about 2-3 mins. As soon as the besan gives a nice cooked aroma sprinkle little water n stir to let it all come together . Cool. Shape into small balls. We should get about 10-12

Divide the dough into balls flatten each ball , put a ball of the stuffing in the centre
Close bringing in all the sides n enclosing the stuffing. Pinch the dough on top n slightly flatten or leave them round
Place on a baking tray n bake in a hot oven at 120• for 20 mins n then at 180• for ten mins or till a nice golden colour.
