Regular, been posted many a time I know but it turned out so good that I really to share with everyone
2 Potaoes Boiled
1 carrot chopped finely
8-10 beans chopped finely
2-3 florets cauliflower chopped
1 capsicum chopped
3-4 tomatoes chopped and roughly puréed / chopped finely
1 large onion chopped finely
Handful of chopped coriander
2 tbsp paste of garlic n red chilli pwd( 6-7 cloves garlic+1 tsp chilli pwd) I used kashmiri ( gives a nice colour)but you could use tikhalal to make it spicy
Pao Bhaji masala ( home made)(for1 time use)
1 tbsp coriander seeds
1/2 tsp cumin
1 black cardamom( seeds only)
1/3 tsp fennel( saunf)
1/2″ stick cinnamon
3-4 dried redchillies/ I tsp red chilli pwd
1/2 tsp amchoor
Salt to taste
Butter A few tbsp😊
Dry roast the cumin, coriander , saunf, cloves,dry red chillies, . In that order. Adding ingredients one by one. If using chilli pwd. Add it 2 mins after taking the spices off the flame. Add the cinnamon, cardamom seeds n amchoor, cool. Dry grinder to a fine powder.
Boil the carrots, beans n cauliflower in a little water enough to cover the veggies n boil till the veggies are mushy. I gave it 3 whistles. Cool n mash the veggies ( use hands)a blender will completely purée them.
Melt the 2 tbsp butter in a flattish vessel. Add the onions n cook till pink. Add the garlic n chilli paste. Cook for a minute . Add the tomatoes n cook till the raw smell is completely gone . Add the Pao Bhaji masala and salt. Cook for a few minutes. Add the mashed veggies n capsicum . Cook till almost dry. Add the mashed potatoes mix. Add a little water n cooking high. Cook , stir n mash the veggies with a spatula till there are no pieces of veggies left. It all becomes like a mash.
Garnish with coriander n serve topped with a blob of butter n chopped onions n lemon.
