Mango Pie

Mango Pie
250 gms plain flour
100 gms frozen butter
1/4 cup chilled water
1 pinch salt

Mangoes cubed 3 if large (  I used Langra)
1/4 cup brown sugar
2 tbsp corn flour
1 tbsp crystallised ginger( optional)
1 tbsp butter

1 tbsp milk for the top crust

Seive the flour on the counter top .mix in the salt . Chop the butter , combine the butter and flour with chilled hands / spatulas till it looks coarse. Mix in water n bring it all together. Don’t knead. Make two portions , keep separately in two ziplock bags and chill in the fridge for half an hour
Sprinkle some flour on the surface Take one portion of the dough n roll out on a the counter surface. About 2″ larger than the pie dish. Place the rolled out dough inside the dish n lightly prick with a fork . Bake in a hot oven for 10 mins at 180•. It should be only half baked
Mix the cornflour and sugar in a bowl toss in the mangoes to mix well. Tip in this mixture on the pastry lined pie dish
Pour over the melted butter n sprinkle the crystallised ginger
Roll out the second pastry n cover the mangoes with it. Seal by pinching both the pastry sheets . Brush with milk. Make slits in the top and bake in a hot oven at 180• for15 mins.
Serve the hot pie with chilled Icecream

Crystallised ginger
100 GMs ginger peel n chop into Juliennes or very small cubes.
Boil in a large pot of water for about 20-30 min/ till the ginger seems tender to touch
Drain and reserve 1/2 cup of the liquid
In another pan add the sugar and the ginger n cook on a medium flame till the liquid dries up and starts crystallising . Remove from the flame. N tip on an oiled parchment paper. Cool
