Shimla Mirch Paneer( capsicums n Cottage cheese)

A paneer dish after my heart. Sort of like Kadhai Paneer.

200 GMs paneer cut into batons
1 yellow bell pepper cut into thick strips
1 capsicum cut into thick strips
1 large onion chopped lengthwise
1 large tomato chopped into strips
1″ pc ginger chopped finely
2 green chillies chopped finely
5-6 cloves garlic minced
2 tbsp tomato purée
Handful chopped coriander
1tbsp oil + 1/2 tbsp ghee
Salt to taste

1 tbsp whole coriander roasted
1 tsp cumin roasted
2-3 dried red chillies roasted/ 1/3 tsp chilli flakes
Grind it all with a rolling pin to get a very crumbly masala.

Heat the oil. Add the chopped onion, garlic , ginger and green chillies. Sauté for a few mins. Add the tomatoes and salt n cook for a few more mins. Add the tomato purée masalas n capsicums. Cook for a few more mins. Donot overcook cause the bell peppers will lose their crunch. By now the tomatoes will turn slightly mushy.add about 1/4 cup of water. Cook. Add the paneer mix gently add the chopped coriander. Cover n cook for 2 mins. Serve hot with hot rotis/ rice.
