Watermelon and Lychee Salad with sprouted lentils
A refreshing breakfast hot n cold, sweet n tangy. Methi sprouts idea I borrowed from Atul Sikands post. ( papaya salad). Now my methi sprouts are being added in almost all my regular ghar ka khaana.
2 cups watermelons cubed
1 cup lychees deseeded
1 tbsp sprouted methi ( fenugreek)
2 tsp honey
1/4 tsp salt
11/2 tsp balsamic vinegar
1/3 tsp crushed peppercorns
5-6 almonds chopped
Mix the honey , vinegar, salt, pepper in a large bowl. Add the watermelon , lychee n methi sprouts. Mix it with a spoon. Crushing a piece or two of the watermelon . Top with almonds . Chill in the freezer for 10 mins
Meanwhile.
Green gram( moong ) sprouted
Wash. Heat a skillet. Add a few drops of ghee/ olive oil add a little jeera( cumin)
Add the sprouted moong n salt. Sauté on high for a few minutes. Add a few drops of lemon juice . Serve hot with the chilled salad
