Round/ Apple Gourd Bhurji (Tinda)

Tinday ( round gourd ) which we normally make either stuffed or chopped and made dry got a new Avataar today by mistake
I asked my help ( a new one)to grate some onions and tomatoes for Chila. The Tindas were lying close by and she grated them as well. My cook came in a huff and complained that the girl had ruined all the Tindas. And I don’t know why but I said iski Bhurji ban jaayegi. N so the Tinday ki Bhurji got created. We loved it and hope y’all will too

500 GMs tender tinda ( round / Apple gourd)
1 large potato boiled and cubed
2 large onions grated
2 large tomatoes chopped
2-3 green chillies chopped
1 tsp minced garlic
1 tsp finely chopped ginger
1/2 tsp cumin seeds
3/4 tsp red chilli pwd
1/4 tsp turmeric
Salt to taste
1 tbsp mustard oil or more
Coriander chopped

Wash and grate the Tinday. Heat the oil in a wok. Add the cumin, and garlic, ginger and green chillies. Fry for a min. Add the onions n sauté till pinkish. (Because of less oil the onions might start sticking to the vessel. Just sprinkle some water and cook on sim. )add the tomatoes. Chilli pwd ,and turmeric. N sauté till the tomatoes are mushy. Add the grated tinda n cook . The Tindas will release a little water cook till it dries up stirring on and off. Add the chopped coriander and eat with hot rotis.
