Golden Alu.
This is a chaat we used to relish
When in school. Our Bhaiyaji( uncle nowadays) was the only vendor allowed near the gates of our school. He made Bhelpuri, Sev puri,Masala Chana ,Masala Seeng(peanuts) n this Golden Alu which was always relished by all . He had a chutney which most Bombay bhelwalas have n you just have to say Bhaiya Golden . I have tried to replicate .A tribute to Bhaiyaji who always called us beheni n after the Alu gave us a pkt of Sukha bhel to tone down the mirchi
I’ve added a strawberry n raw mango salsa on the side
Golden Alu
Potatoes boiled with skins
Golden chutney
Onions chopped
Nylon sev
Juice of lemon
Corriander to garnish
Boil small potatoes with a little turmeric cool n peel
Golden chutney
1/2 cup roasted n peeled chana
A little chopped corriander
4-5 green chillies
salt to taste
2-3 tbsp chopped corriander
Grind the chanas very coarsley
Grind the green chilies salt n corriander to a coarse paste
Mix this paste in the chana . It should be like a solid lump
Cut the potato in half horizontally n very lightly scoop it the centre ( not too much) n sprinkle little salt n lemon on it . Take a lump of the golden chutney size of a marble place it on the scooped potato n press it in. Garnish with onions, corriander peanuts. Top with nylon sev n little lemon juice n salt. Serve with a nice cool lemonade
Strawberry N mango salsa
Grated raw mango 1
Onion 1 finely chopped
1-2 green chillies chopped
Handful of basil leaves chopped
Salt to taste
1/2 tsp of EEVO
1-2 tsp Apple cider vinegar( optional)
Wash n hull the strawberries n finely chop them. Mix all the ingredients in a bowl chill n serve with nachos or chips or even with roasted murmure or with Golden Alu
