For the usual everyday dinner besides the greens n kadhi, dal etc Paneer  Bhurji is a real life saver. With Leftovers we can get fabulous stuffed parathas or tikis

200gms homemade paneer/ chenna ( made from 1 litre milk)
1 tomato chopped fine
1/4 cup finely chopped onions
1/4 cup chopped capsicums
2 cloves garlic minced
1/4 tsp turmeric pwd
1/2 tsp red chilli pwd
1/4 tsp pudina / mint pwd
1-2 green chillies chopped( optional)
Salt to taste
Oil/ ghee 2 tsps

Crumble the paneer n drain
Heat the oil in a PAN. Add the green chillies, garlic n onions. Sauté till the onions turn pink
Add the capsicums n tomatoes n cook till mushy. Add the spices n pudina pwd. Cook for a minute. Add the crumbled paneer n cook on high till almost dry yet soft.
