Veggie Subs

2 cups mixed veggies ( carrots, beans, 1 small potato, peas, cauliflower( optional)
3 large tomatoes chopped
2-3 green chillies roughly crushed
1 sprig curry patta
1 tsp red chilli pwd
1/4 tsp turmeric
Salt to taste
Cheese slices/ grated cheese
Chopped coriander
1 tsp mustard seeds( rai)
1 tsp oil+ 1 tsp ghee

Chop the veggies finely . Finely chop the tomatoes
Heat the oil+ghee in a vessel. Add the rai as it starts spluttering Add the curry patta and the crushed green green chillies. Add the veggies reserving the tomatoes.
Tip in the turmeric .red chilli pwd and salt.
Mix it properly . Cover with a lid of water lower the flame and cook for 5-7 mins till a little done. Add the tomatoes .n mix Cover n cook again till soft. Open and cook again till the water completely evaporates . Add the coriander leaves n mix it well.
Slice the French loaves horizontally from the centre to get two subs. Leaving 1 centimetres on the sides remove the bread from the centre. Fill the veggies in
Top with cheese slices n bake.
Or, just put this filling between 2 slices of bread toast n enjoy/ fill in vol au vent cases or tarts top with cheese bake and serve as a finger food.
